Raw as in uncooked. This particular recipe is made with zucchini - sans chick.

I guess I don't understand, hummus is never cooked... And if there is no chic pea, then it really isn't hummus at all. I don't think I've ever heard of or tried hummus made from raw chic pea. :] but I would try it !

Ahh, but the chick peas are cooked during their process into the can - unless you soak them and consume them in that state. Which is something I am curious about. I haven't traveled down that road yet. Same with olive oil (if used) - raw would include unprocessed (heated) oil. Most hummus contains chick peas which are processed. The zucchini "hummus" is not a chick pea version - but everything else remains the same, including the texture. Stretching the possibilities. :-)))
