Are you a very happy and colorful person? Well, this recipe is super easy for you to do with your kids as a weekend activity. The following recipe is a rainbow cake roll. This sounds quirky but it is really good and do not worry if you are on a diet, one day will not harm you. Now let’s stop all the chit-chatting and let’s begin with your ingredients.
Now, your ingredients are super easy to get and inexpensive. You will need five egg yolks, 2/3 cups of granulated sugar and make sure you divide them into 1/3 cup portions, 1 teaspoon lemon juice, ½ teaspoon finely grated lemon zest, five egg whites, 2/3 cup of cake flour, ¼ teaspoon of salt, 1 teaspoon of baking soda, and last but not least 3 tablespoons of melted butter.

Melt your butter by putting a small container in a pan with water and heat it up. Fold the melted butter.
Now for the fun part, divide your batter into six different containers. Put small drops of food coloring into your batter. You can use whatever color and whatever shade you want, but I will use the colors of the rainbow. Carefully, pour your batter in different pastry bags. If you do not have pastry bags use a simple Ziploc bag which will work the same. Get your cookie sheet out and place parchment paper on top. You can also use wax paper and it will also do the job for you. With each batter, start pouring the batter into stripes of colors you want. Make sure to put them tightly together, otherwise the cake roll will not be as it should due to the fact that there is a hole in the cake. Keep in mind that if you use a rectangular pan you will be rolling from the long end. This cake should cover 15”x12” and it should use almost all the batter.
Then, put it in the oven to be baked at 375F for about 10-12 minutes. The cake is baked fast because the cake is not to thick. You should know your cake is ready when you can insert a toothpick or a knife and it will come out clean. The cake has to be pretty firm when you touch it and it is ok if the edges are a bit burned or brown. If your whole cake is brown then you probably overcooked it. Remove your pan from the oven and let it cool slowly. Flip the cake into a clean and damp cloth and remove the wax paper carefully making sure your cake does not stick in the wax paper. Place another wet and damp cloth on top of the other side of the cake and flip it over. This will reveal to you the good side of the cake, otherwise known as the colorful side. Now, be careful for this part and be very gentle. Roll your cake however you want either vertical or horizontal. Let the cake cool completely. You can also leave it overnight.
Finally, unroll your cooled cake and fill it with either whipped cream or ice cream. I would preferably put ice cream but it is totally up to you. Enjoy this cake and remember… share if not we will grow sideways not taller. Have fun and expirement different designs and colors.
