1Foodborne IllnessStaphylococcusWhat is the infectious agent (pathogen) that causes this infectious disease?Staphylococcus is a common bacterium found on the skin and in the noses of up to 25% of healthy people and animals. Staphylococcus is important because it has the ability to make seven different toxins that are frequently responsible for food poisoning. (Center for Disease Control and Prevention , 2006).The infectious agent that causes Staphylococcus is a Staphylococcus aureus bacterium. This particular strain of bacteria is resistant to most antibiotics. Staphylococcus causes food poisoning. This form of food poisoning is an illness that resides in the gastrointestinal area of the body.How is this infectious agent transmitted?Staphylococcus is mainly transmitted through contaminated food or from food service employees who can carry the Staphylococcus aureus bacteria though contaminated food such as cheese and milk. Staphylococcus is a form of food poisoning that is tolerant to salt. Because of salt tolerance this foodborne illness can grow and survive in foods like ham.Staphylococcal toxins are resistant to heat and cannot be destroyed by cooking. (Center for Disease Control and Prevention , 2006). Although Staphylococcal can be found in foods like cheese, milk and ham, the risk of transmitting the disease is in foods that are made by hand that require no cooking. These types of foods include but are not limited to deli meats and some pastries. Meals such as sandwiches are the most at risk.What is an example of a real life outbreak of Staphylococcal?Staphylococcal food poisoning can occur when foods are contaminated through preparation. This particular foodborne illness has a tolerance to salt and is most likely to be contaminated through deli meats. In July 2012, 60 individuals staying and the Denver Rescue Mission were sickened with Staphylococcal food poising by eating contaminated turkey.
