Sugar is used as a preservative to keep food fresh and to prevent mold. Salt is also used a lot as a preservative because it tastes good and keeps the food fresh. That is why if someone buys food containing lots of sugar and salt it lasts longer. Fruits also have the preservative sugar but it occurs naturally. Fruits can be fresh for weeks if their skin is not punctured. When the skin of a fruit is punctured it exposes the inner fruit to oxygen, the bacteria within the fruit needs oxygen to grow and develop. That is why a fruit rots more quickly after when being punctured.
What is mold? Mold is a form of fungus that grows multi-celled organisms. Mold lives on food made of plants or animals, or on other decaying materials. It is commonly found on food but can also be found in walls and other places where there is decomposing matter. Mold can be found in almost every environment. It can be found outdoors in damp areas or inside where there is a lot of humidity. Many people add mold to food because it adds flavor, like in cheeses. Very rarely does mold cause harm to the body if digested. Realistically mold, if eaten, really does not do harm to the body unless it is a very dangerous mold like black mold. Mold in food is usually green and fuzzy.
How does mold grow? Mold needs a food source, a source of moisture and a place to grow. Temperature, time, space, moisture and light all affect mold’s growth. Mold grows the quickest in warm, moist and dark conditions. That is why food gets very moldy when left in a lunchbox or bag. There are different types of mold that grow on different food. Blue mold grows on bread and is a very common and well-known mold. Green mold grows on cheese. Other molds are called water molds and live in water and soil. Bread takes about 10 days, Fruit 1-10 days, meat 7 days and dairy 1 or more days to mold. Dairy molds very quickly because it contains lots of healthy bacteria giving mold a wonderful place to grow. Fruit and dairy take longer because they contain salt and sugar that work as preservatives.
